In a large bowl, whisk together the oat flour, flaxseed meal, baking powder, salt, and cinnamon.
In a separate bowl, whisk the eggs, then add the almond milk, coconut oil, and honey. Mix well.
Pour the wet ingredients into the dry ingredients, then add the chia seeds. Mix until just combined, and let it rest for 10 minutes to allow the chia seeds to absorb the liquid.
Preheat the waffle iron and grease it with coconut oil. Pour in a portion of the batter and cook until golden brown, about 3-4 minutes.
To serve, top the waffles with fresh blueberries and sliced banana, then drizzle with a little Greek yogurt.
Sprinkle with almond flakes and a pinch of cinnamon, then serve immediately.
