Place the ground beef in a large bowl. Add the chopped onion, minced garlic, breadcrumbs, egg, salt, pepper, and dried thyme. Mix well to combine.
Shape the mixture into four equal patties. Make sure to leave the center of the patties slightly thinner to ensure even cooking.
Melt the butter in a skillet over medium heat. Cook the patties on both sides until golden brown, about 4-5 minutes per side.
Toast the inside of the burger buns in a skillet or oven until crispy.
Assemble the burgers: place the beef patty on the bottom half of the bun, top with a slice of pickle, and cover with the top half of the bun.
