Preparation: Peel and dice the ripe tomatoes. Mince the garlic and grate the ginger.
Sauté: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and ginger and sauté for 2-3 minutes, or until fragrant.
Add Tomatoes: Add the diced tomatoes and stir well to combine with the aromatics.
Season: Pour in the lime juice and rice vinegar, then add the brown sugar, salt, and pepper. Stir to combine and cook over medium heat for 15-20 minutes, or until the tomatoes have softened and the sauce has thickened.
Purée (Optional): For a smooth sauce, use an immersion blender to purée the mixture. If you prefer a chunkier texture, leave it as is.
Serve: Serve the sweet and sour lime tomato sauce warm or cold with grilled meats, seafood, or rice dishes. Garnish with fresh cilantro, if desired.
