Wash, peel and dice the pears into small cubes. Finely chop the red onion as well.
In a medium saucepan, combine the apple cider vinegar and brown sugar. Heat over medium heat until the sugar is dissolved.
Add the diced pears, chopped red onion, raisins, ground ginger, and cinnamon to the saucepan. Stir well to combine.
Simmer over low heat for 20-25 minutes, stirring occasionally, until the mixture thickens and the pears are tender.
Season with salt and ground black pepper. Cook for an additional 5 minutes to allow the flavors to meld completely.
Let it cool slightly, then serve with cheeses, roasted meats, or store in sterilized jars in the refrigerator.
