    Preparation Steps

    1

Clean the mussels: thoroughly scrub the shells to remove any sand or debris.

    2

Bring a pot of water to a boil, then add the mussels. Cook for 3-5 minutes, or until the shells open. Discard any mussels that do not open.

    3

Drain the mussels and carefully remove the mussel meat from the shells. Rinse with cold water.

    4

In another saucepan, combine the white wine vinegar, water, honey, brown sugar, and salt. Heat over medium heat until the sugar is completely dissolved.

    5

Add the cinnamon stick, cloves, thinly sliced ginger, and lemon juice. Simmer over low heat for 3 minutes to allow the flavors to meld.

    6

Place the cooked mussel meat into sterilized jars, then pour the hot sweet and sour brine over them.

    7

Seal the jars and let them cool to room temperature. Then, refrigerate for at least 12 hours to allow the flavors to fully develop.

    8

Serve chilled as a unique sweet and sour pickle or alongside seafood salads.
