Peel the sweet potatoes and cut them into small cubes.
In a large saucepan, bring water to a boil, then add the sweet potatoes and cook for about 15-20 minutes, or until completely tender.
Drain the sweet potatoes and return them to the saucepan.
Add the butter, milk, salt, pepper, and nutmeg.
Using a potato masher or immersion blender, purée until smooth.
For a creamier consistency, add a little more milk.
Before serving, sprinkle with fresh parsley and serve immediately.
