Wash the sweet potato, then peel and dice it into smaller pieces.
Bring a pot of water to a boil, then cook the sweet potato for 10-12 minutes, or until completely tender.
Drain the sweet potato, then mash it with a fork or potato masher until smooth.
In a bowl, combine the mashed sweet potato with the whole wheat flour, salt, and olive oil. Slowly add the lukewarm water while mixing the dough.
Knead the dough for 5-7 minutes, until it becomes elastic and smooth. If it's too sticky, add a little more flour.
Divide the dough into 4 equal parts, then roll each part into a thin, circular tortilla on a floured surface.
Heat a dry skillet over medium heat, then cook the tortillas one at a time for 1-2 minutes per side, or until lightly browned in spots.
Serve the sweet potato tortillas fresh with your favorite fillings or sauces.
