Thoroughly wash, pit, and mash the plums in a large container.
Add the sugar and water to the plum mash, mixing well until the sugar begins to dissolve.
Incorporate the distiller's yeast and allow the mixture to ferment in a sealed fermentation vessel for 2-3 weeks. Stir the mixture once daily.
After fermentation is complete, strain the mash to remove the fruit solids.
Distill the strained liquid using a still. Pay close attention to temperature and safety precautions during distillation.
Pour the distilled Szilvapálinka into clean bottles and let it mature for at least 2 months to allow the flavors to meld perfectly.
