Peel and finely chop the onion. Wash the tomato and dice it into small cubes.
Heat the oil in a skillet over medium heat, add the onion, and sauté until translucent.
Add the ground beef to the onion and cook until the meat is completely browned. Season with taco seasoning, salt, and pepper, then continue to cook for another 4-5 minutes, allowing the meat to absorb the flavors.
In a clean skillet or on a griddle, place a tortilla wrap, sprinkle generously with grated cheddar cheese, then layer the seasoned ground beef mixture and the diced tomato on top.
Sprinkle the filling with freshly chopped cilantro, then place another tortilla wrap on top. Gently press down to ensure it stays together nicely.
Cook on both sides over medium heat for about 2-3 minutes, until the tortilla is crispy and the cheese is melted and gooey inside. Tip: Use a spatula to carefully flip the quesadilla to prevent it from falling apart.
Once done, transfer to a cutting board and cut into wedges. Serve warm, garnished with fresh cilantro. Tip: you can offer sour cream, salsa, or guacamole on the side!
