600 g Beef (chuck or brisket)
1 White onion
3 cloves Garlic
1 Bay leaf
1 tsp Salt
0.5 tsp Black pepper
2 Chipotle peppers in adobo sauce (canned)
2 Tomatoes
10 g Fresh cilantro
1 Lime
1 tbsp Olive oil
8 Corn tortillas

    Cut the beef into large chunks. In a pot, combine the beef with cold water, onion, garlic, bay leaf, salt, and pepper. Simmer over low heat for 2 hours, or until the beef is very tender.
