Heat the oil in a pot and toast the tarhonya (egg barley) until golden brown.

Add the finely chopped carrots and parsnip, then sprinkle with Hungarian sweet paprika.
Pour in the vegetable broth and cook over medium heat for 15-20 minutes, or until the tarhonya and vegetables are tender.
Before serving, sprinkle with fresh parsley.
