Juice the limes and finely chop the cilantro and garlic.
In a small bowl, combine the lime juice, tequila, and honey. Add the chopped garlic.
Heat the olive oil in a saucepan over medium heat. Pour in the lime mixture.
Cook over medium heat for 5-7 minutes, or until the sauce has slightly thickened, stirring frequently.
Remove from the heat and stir in the chopped cilantro. Season with salt and pepper to taste.
Let cool slightly, then serve with grilled meats, fish, or seafood.
