In a medium saucepan, combine water, sugar, and lime zest. Heat over medium heat, stirring until the sugar is completely dissolved.
Let the sugar syrup cool completely. Stir in the fresh lime juice and tequila.
Pour the mixture into a shallow dish and place in the freezer.
Every 30 minutes, scrape the sorbet with a fork to create an icy texture. Repeat this process 3-4 times until completely frozen.
Before serving, let the sorbet stand at room temperature for 5 minutes to soften slightly. Garnish with fresh mint leaves and a pinch of salt.
