Toast the hamburger buns in the skillet until the insides are golden brown.
Prepare the vegetables: julienne the carrots, slice the cucumber, and slice the red onion into thin rings.
Assemble the burgers: spread garlic mayonnaise on the bottom bun, top with cilantro leaves, the Thai spiced patty, and then layers of carrot, cucumber, and red onion.
Top with the other half of the bun and gently press down. Serve immediately with coconut milk sauce and a fresh green salad.
