In a bowl, combine the ground beef with salt and freshly ground black pepper. Mix well, then divide into four equal portions and form into patties about 2 cm thick.
Heat a skillet or grill over medium-high heat. Brush the patties with a little olive oil, then cook on both sides for about 3-4 minutes, until browned and crusty.
During the last minute of cooking, place a slice of cheddar cheese on each patty, then cover the skillet to allow the cheese to melt.
In a dry skillet, cook the pancetta until crispy, then set aside on a paper towel to drain excess grease.
Slice the onion into thin rings. Sauté in a little olive oil over medium heat until golden brown and caramelized, bringing out their sweetness.
Meanwhile, halve the hamburger buns and toast them in a dry skillet or brushed with a little butter until golden brown on the inside.
Prepare the vegetables: slice the tomato into thin rounds, and slice the pickles.
Spread the cut sides of the toasted buns with the homemade burger sauce, adding a rich flavor to the burger.
Assemble the burger: place a lettuce leaf on the bottom bun, followed by the cheeseburger patty, grilled onions, crispy pancetta, tomato, and pickles. Top with the other half of the bun.
Serve immediately, preferably with hand-cut french fries and homemade dipping sauce. Tip: For an even richer flavor, add a little extra homemade burger sauce on top before serving.
