    Preparation Steps

    1

Peel the potatoes, cut them into smaller pieces, and boil them in salted water for about 20 minutes, or until tender.

    2

Drain the cooked potatoes, mash them in a bowl, and let them cool completely.

    3

To the cooled potatoes, add the flour, egg yolks, and a pinch of salt. Knead until you have a soft, homogeneous dough.

    4

Divide the dough into four parts. Roll each part into a rope about 2 cm thick, then cut into small pieces. Gently press each piece with a fork to create the characteristic gnocchi ridges.

    5

Bring a large pot of water to a boil. Add the gnocchi in smaller batches. As soon as they float to the surface (about 2 minutes), drain them and set aside.

    6

Chop the thyme. In a skillet, heat the olive oil. Add the chopped thyme and sauté for 1-2 minutes, until the oil is infused with the thyme flavor.

    7

Add the cooked gnocchi to the skillet and sauté for 5-7 minutes, or until the gnocchi are lightly browned and crispy.

    8

Before serving, sprinkle with fresh parsley and freshly ground black pepper.
