Freshly baked tiger bread

Tiger Bread

Tiger bread, also known as Dutch crunch bread, is a unique textured bread distinguished by its distinctive crispy crust. The rice flour coating cracks during baking, resulting in a tiger-like appearance. Originally from the Netherlands, the bread is now popular worldwide. It's crispy on the outside, and soft and light on the inside, making it perfect for sandwiches or enjoyed on its own with butter and cheese.

    Preparation Steps

    1

In a small bowl, combine the lukewarm water, yeast, and sugar. Let it stand for 10 minutes, until frothy.

    2

In a large bowl, whisk together the flour and salt, then add the yeast mixture and melted butter.

    3

Knead the dough for 10-12 minutes, until it becomes elastic and smooth. If it is too sticky, add a little flour.

    4

Cover with a kitchen towel and let rise in a warm place for about 1 hour, until the dough has doubled in size.

    5

Meanwhile, prepare the tiger stripe glaze: in a bowl, combine 100 g of rice flour, 100 ml of lukewarm water, 5 g of sugar, 5 g of oil and 1 g of salt to obtain a thick, spreadable paste.

    6

Divide the risen dough into two equal parts, then shape into loaves or rolls.

    7

Brush the tops of the dough with the rice flour glaze using a brush to create the tiger stripe pattern during baking.

    8

Place the dough on a baking sheet lined with parchment paper and let rise for another 30 minutes.

    9

Preheat the oven to 400°F (200°C) and bake the bread for 25-30 minutes, until golden brown and cracked.

    10

Let cool slightly, then slice and serve with butter or cheese.
