2 Eggs
20 ml Water
1 pinch Salt
100 g Mascarpone cheese
30 g Powdered sugar
1 tsp Vanilla extract
30 ml Espresso coffee
10 g Cocoa powder
20 ml Amaretto liqueur
30 g Melted butter
50 g Grated dark chocolate

    Preparation Steps

    Sift the flour into a large bowl, add a pinch of salt, and create a well in the center. Crack in the eggs and slowly incorporate them into the flour. Add a little water if needed to form a pliable dough.

    Knead the dough for at least 10 minutes, until it's smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.

    For the filling, combine the mascarpone cheese, powdered sugar, vanilla extract, espresso coffee, and Amaretto liqueur until you have a creamy consistency.

    Roll out the dough thinly. Evenly spoon small portions of the filling onto one half of the dough, spacing them apart.

    Fold the other half of the dough over the filling. Use a ravioli cutter or knife to cut out the ravioli. Press the edges firmly to seal and prevent the filling from leaking during cooking.

    Bring a large pot of salted water to a boil. Drop in the ravioli and cook for 3-4 minutes, or until they float to the surface.

    Drain the ravioli. Melt the butter in a skillet over medium heat, and gently toss the ravioli in the butter until lightly caramelized.
