Toast the hamburger buns in a skillet or on a grill until golden brown and crispy on the cut sides.
Slice the tomatoes and red onion. Prepare the arugula leaves and avocado slices.
Assemble the burgers: spread the bottom bun with garlic vegan mayonnaise, then layer with arugula, crispy tofu, tomato slices, red onion slices, and avocado.
Top with the other half of the bun and gently press down. Serve immediately with sweet potato fries or a vegan salad.
