Cut the tofu into cubes. Heat the olive oil in a skillet over medium-high heat. Fry the tofu cubes until golden brown on all sides, then set aside.
Cut the broccoli into small florets. Julienne the carrots. Cut the bell pepper and onion into strips.
Heat the sesame oil in a large skillet or wok over medium heat. Add the grated ginger and minced garlic. Sauté for 1-2 minutes, until fragrant.
Add the onion, carrots, and broccoli. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
Add the bell pepper and pour in the soy sauce. Stir well to combine and cook for another 2-3 minutes.
Add the fried tofu and toss to combine with the vegetables. Season with salt and pepper to taste.
Before serving, sprinkle with sesame seeds (optional) and serve with steamed rice or noodles.
