Tomato and Bean Stew is a truly simple, but extremely delicious dish that exists in many variations in Hungarian cuisine. The beans are cooked in a thick, spicy tomato sauce, which is flavored with garlic, onion, bay leaf and a little smoked meat. Soak the beans overnight, then cook them in salted water until tender.
Heat the olive oil in a saucepan and sauté the finely chopped onion and garlic until softened and fragrant.
Stir in the tomato paste and cook it with the onion mixture for a few minutes.
Season with salt, pepper, oregano, and basil. Add the cooked beans.
Simmer until the tomato sauce has thickened and the beans have absorbed the flavors.
