Finely chop the onion and garlic and sauté them in olive oil until softened.
Add the sliced carrot and celery stalk, and sauté for a few minutes.
Add the diced tomatoes (or canned tomatoes) and pour in the water or vegetable stock.
Season with basil, oregano, salt, and pepper. Bring to a simmer and cook over low heat for 20-25 minutes.
Add the sugar and purée with an immersion blender until smooth.
Before serving, garnish with grated cheese or toasted bread cubes, if desired.
