Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
Coarsely grate the Trappista cheese and finely mince the garlic.
In a bowl, combine the grated cheese, sour cream, minced garlic, salt, and pepper. Mix well to form a creamy filling.
On a lightly floured surface, roll out the puff pastry and cut it into even-sized triangles.
Place a spoonful of the cheesy filling onto the wide end of each triangle.
Gently roll up the triangles into croissant shapes, starting from the wide end.
Brush the tops of the croissants with beaten egg, then sprinkle with sesame seeds.
Place the croissants on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
Let the croissants cool for a few minutes before serving warm or slightly cooled.
