Prepare the vegetables: wash the lettuce leaves and thinly slice the tomato and red onion.
Season the beef patties with salt and pepper on both sides. Preheat a skillet over medium heat and cook the patties for 3-4 minutes per side, or until a golden-brown crust forms.
When the patties are almost cooked through, place a slice of cheddar on each and cover the skillet to allow the cheese to melt. Repeat with all patties.
Toast the hamburger buns in a skillet or on a grill until the cut sides are golden brown and crispy.
Assemble the burgers: spread mayonnaise on the bottom bun, top with lettuce, one cheese-covered patty, another layer of patty and cheddar, and finally a third patty. Add the tomato and onion slices, then drizzle with ketchup and mustard to taste.
Place the top bun on and gently press down. Serve immediately with fries or a fresh green salad.
