In a large mixing bowl, whisk together the flour, sugar, baking powder, and a pinch of salt. This will be the dry base of the batter – it's always a good idea to mix it beforehand to avoid lumps.
In another bowl, whisk the eggs, then stir in the milk, melted butter, and vanilla extract. Make sure the butter is only lukewarm; otherwise, the eggs might curdle.
Pour the wet mixture into the dry ingredients, then stir until the batter is smooth. Don't overmix – this keeps the waffles light and airy. Let it rest for 10 minutes.
Meanwhile, prepare the mango and pineapple: peel, core, and dice them into small cubes. It's important that all the fruit is free of leaves and rind; only use the flesh!
Preheat the waffle iron and lightly grease it with oil. Pour in a portion of batter and cook until golden brown, about 4-5 minutes. Don't open it too soon, or the waffle may tear.
Place the finished waffle on a plate and sprinkle with the fresh, diced mango and pineapple. Serve immediately, so the fruit remains flavorful and juicy. Extra tip: if desired, you can drizzle a little honey on top.
