Season the beef patties with salt and pepper on both sides. Heat a skillet over medium-high heat and cook the patties for 3-4 minutes per side, until browned and cooked through.
When the patties are almost done, place a slice of Gouda cheese on top of each patty. Cover the skillet and let the cheese melt.
To make the caramelized onions, heat the olive oil in a skillet over low heat. Add the thinly sliced onions and cook, stirring occasionally, for about 10 minutes, or until softened and golden brown.
Toast the hamburger buns until lightly golden and crispy on the cut sides.
Assemble the burgers: spread truffle mayonnaise on the bottom bun, top with arugula, the cheese-topped beef patty, caramelized onions, and fresh truffle shavings.
Top with the other half of the bun, gently press down. Serve immediately with fries or sweet potato fries.
