In a bowl, combine the grated truffle, mascarpone cheese, truffle oil, minced garlic, and grated Parmesan cheese.
Season the filling with salt and pepper, then mix thoroughly until creamy.
Lay the puff pastry on a lightly floured surface and cut it into equal-sized triangles.
Place a dollop of truffle filling on the wider end of each triangle.
Carefully roll up the triangles into croissant shapes, starting from the wider end.
Brush the tops of the croissants with beaten egg and sprinkle with sesame seeds.
Place the croissants on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
Let the croissants cool for a few minutes before serving warm or slightly cooled.
