20 g Yeast
10 g Sugar
250 ml Warm water
2 tbsp Olive oil
1 tsp Salt
1 tsp Baking soda
1 l Water for boiling

    Begin by preparing the dough: In a large bowl, combine the flour and salt.

    Add the sugar to the warm water, then sprinkle in the yeast. Stir and let it rest for 5-10 minutes, until the yeast becomes frothy.

    Pour the yeast mixture into the flour, then add the olive oil. Mix thoroughly, then knead the dough by hand or with a dough machine for about 10 minutes, until smooth and elastic.

    Shape the dough into a ball, place it back in the bowl, and cover with a damp kitchen towel. Let it rest for 1 hour to rise.

    Once the dough has risen, turn it out onto a work surface and divide it into 8-10 portions. Roll each portion into a rope, then twist them into pretzel shapes.

    Finely grate the truffle. Sauté it in a skillet with a little olive oil until its intense aroma is released.

    In a large pot, bring water to a boil, then add baking soda. Blanch the pretzels in this water for 1-2 minutes, then remove them with a slotted spoon.
