Slice the cucumber, tomatoes, and red onion into thin rounds.
Warm the pita bread in a skillet or oven until slightly crispy.
Place the fresh vegetables inside the warm pitas and spoon the tuna mixture over them.
Drizzle with a little olive oil, and optionally sprinkle with extra parsley.
Fold the pita and serve immediately.
