In a bowl, combine the ground turkey with salt and pepper. Gently form into 4 equal-sized patties. TIP: Ground turkey is leaner than beef, so avoid over-compacting the patties to keep them juicy.
Heat the grill pan over medium heat and lightly brush with olive oil. Cook the patties for 3-4 minutes per side, until golden brown and cooked through.
During the last minute of cooking, place a slice of cheddar cheese on top of each patty. Cover the pan to allow the cheese to melt beautifully.
Toast the cut sides of the hamburger buns in the grill pan until golden brown and crispy.
Prepare the vegetables: slice the tomatoes and red onion, and wash the iceberg lettuce leaves.
Assemble the burgers: Spread mustard on the bottom bun, top with a lettuce leaf, a cheesy turkey patty, tomato slices, red onion slices, and finally, spread ketchup on the top bun.
Serve the burgers hot with french fries or a fresh salad. TIP: For an extra kick, mix a little mustard and ketchup together for a flavorful condiment.
