Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Crumble the tofu with your hands or a fork into small pieces and add it to the skillet.
Sprinkle with turmeric, Hungarian sweet paprika, black salt, and pepper. Mix well to ensure the spices are evenly distributed.
Add the diced bell pepper and tomato, and cook for another 5-7 minutes, until the vegetables are slightly softened.
Taste and add more salt or spices as needed. Finally, sprinkle with fresh, finely chopped parsley.
Serve hot with toast or fresh bread. You can also serve it with fresh vegetables or avocado.
