Soak the gelatin in water, then heat over low heat until completely dissolved.
Mix the curd cheese with the sugar and vanilla sugar until smooth and creamy.
Whip the heavy cream until stiff peaks form. Gently fold it into the curd cheese mixture, then add the dissolved gelatin.
Place the sponge cake base in a cake pan and pour the curd cheese cream on top. Smooth the top evenly.
Melt the dark chocolate over a double boiler and let it cool slightly.
Drizzle the chocolate over the curd cheese cream, then refrigerate the cake for at least 4 hours to set.
Before serving, garnish the cake with extra chocolate shavings or small T煤r贸 Rudi bars on top.
