Prepare all the ingredients. Separate the eggs, placing the egg whites in a clean bowl.
In a separate bowl, combine the egg yolks with the sugar, vanilla sugar, and champagne.
Pour the milk into a saucepan and heat over medium heat until lukewarm. Then, pour the warmed milk into the egg yolk mixture and whisk to combine.
Place the butter in a small bowl and melt it in a double boiler or microwave. Once melted, pour the butter into the egg yolk mixture and mix well.
Beat the egg whites until stiff peaks form. Gently fold in the heavy cream.
Sift the flour and gradually add it to the mixture, mixing well to ensure no lumps remain.
Grease a soufflé dish with butter, then pour in the batter.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once baked, let it cool slightly before serving warm.
