    Prepare all the ingredients. Break the chocolate into smaller pieces, separate the eggs, and place the egg whites in a clean bowl.

    Mix the egg yolks with the sugar, vanilla sugar, and half of the chocolate.

    Pour the milk into a saucepan and heat over medium heat until lukewarm, then pour it into the egg yolk mixture.

    Place the remaining chocolate and butter in a small bowl and melt over a double boiler. Once the chocolate has melted, pour it into the egg yolk mixture and mix well.

    Beat the egg whites into stiff peaks, and gently fold them into the chocolate mixture.
