In a large bowl, combine the flour, dry yeast, sugar, vanilla sugar, and salt. This will be the base of your dough.
Add the yogurt, lukewarm water, olive oil, and vanilla extract. Knead by hand for about 10 minutes, until you have a smooth and elastic dough.
Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
Divide the risen dough into 6 equal portions. Shape each portion into a ball, then roll them out into oval shapes on a lightly floured surface.
Lightly sprinkle the center of each rolled-out dough with vanilla sugar, then fold it in half and flatten it slightly to trap the vanilla flavor inside.
Heat a non-stick skillet over medium heat. Cook the naans for 1-2 minutes per side, until golden brown spots appear.
While the naans are still hot, brush them with melted butter to enhance the sweet, vanilla flavor.
Serve warm, either on its own or with a dollop of plain yogurt or fruit compote.
Tip: For a more intense vanilla flavor, use the scraped seeds of a real vanilla bean in addition to the vanilla extract.
The naan is perfect when it is slightly crispy on the outside, but soft and slightly chewy on the inside. Don't overcook it!
