Prepare all the ingredients. Zest the orange, break the chocolate into smaller pieces, separate the eggs, and place the egg whites in a clean bowl.
Mix the egg yolks with the sugar, vanilla sugar, and orange zest.
Pour the milk into a saucepan and heat over medium heat until lukewarm, then pour it into the egg yolk mixture.
Place the chocolate and butter in a small bowl and melt over a double boiler. Once the chocolate has melted, pour it into the egg yolk mixture and mix well.
Beat the egg whites until stiff peaks form, and gently fold them into the chocolate mixture.
Sift the flour and gradually add it to the chocolate mixture. Mix well to combine.
Butter a soufflé dish and pour the batter into it.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, until the soufflé has risen nicely and is golden brown.
Once done, let it cool slightly, then serve warm, and sprinkle some orange zest on top.
