Prepare all the ingredients. Chop the walnuts, break the chocolate into smaller pieces, separate the eggs, and place the egg whites in a clean bowl.
In a bowl, combine the egg yolks with the sugar, vanilla sugar, and ground walnuts.
Pour the milk into a saucepan and heat over medium heat until lukewarm. Then, pour it into the egg yolk mixture.
Place the chocolate and butter in a small bowl and melt in a bain-marie or double boiler. Once the chocolate is melted, pour it into the egg yolk mixture and mix well.
Whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture.
Sift the flour and gradually add it to the chocolate mixture. Mix well to combine.
Grease a soufflé dish with butter and pour in the mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and turned golden brown.
Once baked, let it cool slightly, then serve warm, sprinkled with a few chopped walnuts on top.
