In a large bowl, combine the flour, salt, and the remaining sugar.
Add the yeast mixture, melted butter, and eggs, then knead into a soft, elastic dough.
Cover the dough with a kitchen towel and let it rise in a warm place for about 1.5 hours, or until doubled in size.
In another bowl, combine the cottage cheese, powdered sugar, and vanilla extract to create a smooth, creamy filling.
Turn the dough out onto a lightly floured surface and divide it into 8 equal portions.
Shape them into small round patties, then gently press down the center to create a space for the cottage cheese filling.
Fill the centers with the cottage cheese mixture, then place them on a baking sheet lined with parchment paper.
Cover again and let rise for another 20 minutes.
Preheat the oven to 350°F (180°C) and bake the buns for 20-25 minutes, or until golden brown.
Let cool on a wire rack, then dust with powdered sugar before serving.
