Preheat your oven to 350°F (180°C). Line a cake pan with parchment paper or grease it with coconut oil.
In a large bowl, whisk together the flour, baking powder, cinnamon, and ground ginger.
In another bowl, combine the grated carrots, brown sugar, apple juice, and coconut oil.
Gradually add the dry ingredients to the carrot mixture, then stir in the ground walnuts.
Pour the batter into the prepared cake pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
Before serving, dust with powdered sugar or garnish with grated orange zest for an extra touch of flavor.
