In a small bowl, combine the almond milk and apple cider vinegar. Let it sit for 5 minutes to slightly curdle – this will help create a lighter texture for the waffles.
In a large mixing bowl, whisk together the whole wheat flour, oat flour, baking powder, cinnamon, and salt.
In another bowl, combine the melted coconut oil, vanilla extract, and maple syrup. Add this to the almond milk mixture.
Pour the wet ingredients into the dry ingredients, and whisk until you have a smooth, lump-free batter.
Preheat your waffle iron to medium heat and lightly grease it with coconut oil.
Pour a portion of the batter into the center of the waffle iron (about one ladleful), close the lid, and cook until golden brown, about 3-4 minutes.
Once cooked, carefully remove the waffle with a spatula and place it on a wire rack to cool slightly and stay crispy.
Serve fresh with fruit, maple syrup, or plant-based yogurt.
