Preheat oven to 350°F (180°C). Grease a 9-inch (22 cm) cake pan or line with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and ground walnuts.
In another bowl, combine the plant-based milk, coconut oil, sugar, applesauce, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before making the frosting.
Whip the plant-based whipping cream until stiff peaks form. Gradually add the powdered sugar and continue whipping until light and creamy.
Evenly spread the frosting over the cooled cake.
Sprinkle with chopped walnuts, then chill for at least 1 hour.
