500 g Potatoes
150 g Flour
1 Egg Yolks
1 pinch Salt
20 ml Olive Oil
150 g Zucchini
100 g Bell Pepper
100 g Mushrooms
2 cloves Garlic
100 g Tomato Purée
5 g Fresh Basil
1 pinch Freshly Ground Black Pepper
50 g Parmesan Cheese

    Preparation Steps

    Peel the potatoes, cut them into smaller pieces, and boil in salted water for about 20 minutes, or until tender.

    Drain the cooked potatoes, mash them in a bowl, and let them cool completely.

    Add the flour, egg yolk, and a pinch of salt to the cooled potatoes. Knead until you have a soft, homogeneous dough.

    Divide the dough into four parts. Roll each part into a rope about 2 cm thick, then cut into small pieces. You can gently press each gnocchi with a fork to create the characteristic ridges.

    Bring a large pot of water to a boil. Add the gnocchi in smaller batches. As soon as they float to the surface (about 2 minutes), drain them and set aside.

    Heat the olive oil in a skillet. Add the finely chopped garlic and sauté over medium heat for 1-2 minutes, until fragrant.

    Add the diced zucchini, bell pepper, and mushrooms. Sauté for 5-6 minutes, or until slightly softened.

    Pour in the tomato purée and cook for another 5 minutes, allowing the flavors to meld.
