Peel and chop all the vegetables.
Sauté the finely chopped onion and garlic in oil until softened and fragrant.
Add the carrots, parsley root, celery, and potatoes. Cook for a few minutes, stirring occasionally.
Pour in the water or vegetable broth and bring to a simmer over medium heat. Cook until the vegetables are tender.
Add the green peas and cauliflower. Continue to cook for another 10-15 minutes.
Season with salt and pepper. Garnish with fresh parsley before serving.
