Wash the lettuce leaves. Thinly slice the tomatoes and red onion.
Halve the avocado, remove the pit, and scoop out the flesh. In a bowl, mash with a fork. Season with salt and pepper, and drizzle with a few drops of olive oil.
Heat a skillet over medium heat. Cook the vegan burger patties for 2-3 minutes per side, or until golden brown.
Toast the hamburger buns in the skillet until the inside surfaces are crispy and golden brown.
Assemble the burgers: spread hummus on the bottom bun, top with lettuce leaves, the vegan patty, avocado mash, and tomato and red onion slices.
Spread vegan mayonnaise on the top bun, then place it on top of the filling. Gently press down and serve immediately.
Serve with a fresh green salad or sweet potato fries.
