Add the brown sugar, cinnamon stick, and cloves. Stir to combine and let simmer for about 5-6 minutes to allow the flavors to meld.
Meanwhile, in a small bowl, whisk together the heavy cream, vanilla extract, and a pinch of salt.
Once the cider is fragrant and hot, slowly pour in the cream mixture, stirring constantly to prevent curdling.
Before serving, strain the cider to remove the spices. Divide among serving glasses.
Garnish with toasted walnuts and, if desired, a dollop of whipped cream.
