Combine the ground beef with a pinch of salt and pepper. Gently form into 4 equal-sized patties. TIP: Avoid over-compacting the meat to keep the burgers juicy.
Heat a grill pan over medium-high heat and melt the butter. Cook the patties for 3-4 minutes per side, until nicely browned.
Towards the end of cooking, place a slice of cheddar cheese on each patty. Cover the pan to allow the cheese to melt.
In a small bowl, whisk together the wasabi paste and mayonnaise until smooth.
Toast the inside of the hamburger buns on the grill pan until lightly golden.
Prepare the vegetables: slice the tomato and red onion, and wash the iceberg lettuce leaves.
Assemble the burgers: Spread the wasabi mayonnaise on the bottom bun. Top with lettuce, the cheeseburger patty, tomato slices, and red onion. Finish with the top bun.
Serve immediately with French fries or a side salad. TIP: Offer any leftover wasabi mayonnaise as a dipping sauce.
