Thoroughly wash the wild boar meat, pat it dry with paper towels, and cut it into cubes.
In a large pot, heat the lard or oil over medium heat. Add the finely chopped onions and sauté until translucent.
Add the crushed garlic, Hungarian sweet paprika, salt, black pepper, and ground caraway seeds. Stir well to combine.
Add the wild boar meat and sear on all sides until browned, stirring constantly.
Pour in the red wine (if using), then add the water and bay leaves.
Bring to a simmer, then cover and cook over low heat for 2-3 hours, or until the meat is completely tender.
10 minutes before the end of cooking, stir in the fresh, finely chopped parsley.
Serve hot with fresh bread or boiled potatoes.
