500 g All-purpose flour
150 g Butter
150 g Grated Cheese
50 g Wild Garlic
150 g Sour cream
1 Egg
25 g Yeast
100 ml Lukewarm milk
1 tsp Salt
1 tsp Sugar
1 Egg for brushing

    Preparation Steps

    Activate the yeast: in lukewarm milk, stir in the sugar and yeast, then let it stand for 10 minutes until foamy.

    In a large bowl, mix the flour and salt, then rub in the butter until evenly distributed and resembles breadcrumbs.

    Finely chop the wild garlic and mix half of it into the flour mixture along with half of the grated cheese.

    Add the sour cream, egg, and activated yeast, then knead the dough thoroughly until it forms a smooth ball.

    On a floured surface, roll out the dough to about 2 cm (¾ inch) thickness, then fold it three times to create a flaky texture.

    Cover with a kitchen towel and let it rest for 30 minutes to rise.

    Roll out again to about 2 cm (¾ inch) thickness, then use a scone cutter to cut out the shapes.

    Place the scones on a baking sheet lined with parchment paper and brush the tops with beaten egg.

    Sprinkle the remaining grated cheese and wild garlic on top, then bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until golden brown.
