Season the yak steaks generously with salt and freshly ground black pepper on both sides.
Heat olive oil in a cast-iron skillet over medium-high heat. Add the crushed garlic cloves and rosemary sprigs to the skillet to infuse the oil with their aroma.
Sear the yak steaks for 3-4 minutes per side for medium-rare, or adjust the cooking time according to your desired level of doneness.
During the last minute of cooking, add butter to the skillet and baste the steaks with the melted butter, spooning it over them to enhance their flavor.
Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for 5-10 minutes before slicing and serving.
Serve the yak steaks hot, garnished with fresh rosemary sprigs, alongside roasted vegetables or creamy mashed potatoes.
