In a large bowl, combine the Greek yogurt, heavy cream, honey, vanilla extract, and lemon juice. Whisk until smooth and well combined.
Refrigerate the mixture for at least 1 hour to allow the flavors to meld and to ensure it's thoroughly chilled before churning.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a freezer-safe container and stir every hour during the freezing process to break up ice crystals.
Freeze for at least 4 hours, or until firm. Before serving, let it sit at room temperature for a few minutes to soften slightly for easier scooping.
